Vital Wheat gluten is a meat-like, vegetarian food product, sometimes called seitan, mock duck, gluten meat, or wheat meat.

It is made from the natural protein found in the endosperm of the wheat berry. It gives shape, volume, and elasticity to baked goods. For a little insight into how Vital Wheat Gluten is made, by three-phase separation technology, the Wheat Flour is first hydrated to activate the gluten, then further processed to remove everything but the Gluten, then dried and ground again into powder.

Vital Wheat Gluten can be used in a wide variety of applications including bakery products; breading, batters, coatings & flavors; breakfast cereals; cheese analogs & pizza; meat, fish, and poultry; milling and flour fortification; nutritional snacks.

Vital Wheat Gluten is combined with water and spices to make the “Wheat meat” known as Seitan. When mixed with water, it becomes a sticky, elastic dough that has a very chewy, mat-like texture. It can be added to any bread recipe to enhance texture and protein content.
